This dip is perfect for your Cinco de Mayo celebration! It's creamy, cheesy, and a little bit of sweet and spicy. Grab a bowl of chips and a margarita to pair with this, and enjoy!
Mexican Street Corn Dip
2-8 oz packs cream cheese, softened
½ cup sour cream
1 tbsp garlic powder
Dash of hot sauce, optional
juice of 1 lime
8 oz pepper jack cheese, shredded
30 ounces thawed-from-frozen corn (you could you canned also)
4 ounces Cotija cheese, crumbled
1 jalapeno pepper chopped (leave the seeds in for extra spice, or remove the seeds for a milder flavor)
3 tablespoons chopped red onion
½ cup chopped fresh cilantro
Tortilla Chips, to serve
Preheat the oven to 350°F. Spray a 9×13-inch baking dish with nonstick spray and set aside.
To a bowl, combine the softened cream cheese, sour cream, garlic powder, optional hot sauce, lime juice, corn, red onion, cotija cheese, sliced jalapeno and half of the shredded pepper jack. Mix until everything is combined.
Pour the mixture into the prepared baking dish. Top with the rest of the pepper jack cheese and bake for 20 minutes or until the cheese is hot and bubbly. Top with chopped cilantro, more cotija, and sliced jalapenos and serve hot with chips.
