One of my favorite childhood memories was getting these cupcake cones when I was a little girl. Now I'm showing you how to make them as Easter bunnies!
Easter Bunny Cupcake Cones
-1 box yellow cake mix, prepared according to the package directions (*this also works great with chocolate or strawberry*)
-20-24 ice cream cones
Two 16 oz containers white or vanilla frosting
4 cups shredded coconut
24 pink jelly beans
48 mini chocolate chips
24 full size marshmallows
1/4 cup pink icing
Grease two 12 cup muffin tins and preheat the oven to 350F. Since you don't use cupcake liners, grease them well!
Mix the batter according to the package directions, then fill each of the cupcake tins with batter, about 3/4 full. You may get 20-24 depending on your pan and how much batter you use for each cupcake. Place an ice cream cone upside down in each cupcake well and press gently so they are secure.
Bake for 18-20 minutes or until the cake mix is golden. *Check the cupcakes about 5 minutes into the baking and make sure no cones have fallen or are lopsided! If they do, just straighten them gently and they should bake just fine.
Once the cones are done, remove from the pan and let cool. To decorate, spread each muffin top with icing and dip in the shredded coconut. Place two mini chips for the eyes and a jelly bean for the nose. Using scissors cut a marshmallow in half on the diagonal, then add a little pink frosting in the center to make two ears. Place on top of the cupcake to complete your bunny!
*TIP: if they don't stand straight on your serving platter, add a little frosting to the bottom of the cone and press on your plate to secure your bunny cone!
